What is a Galley?

A galley is the professional kitchen system fitted aboard a ship, superyacht, or commercial vessel. Unlike a shore-based kitchen, a marine galley operates on a moving platform, draws power from onboard generators, and must meet SOLAS fire suppression and MCA ventilation standards. Vista Marine designs, supplies, and installs complete galley systems — from CAD layout to crew training — for motor yachts, sailing yachts, explorer vessels, and commercial ships from 30 to 200 metres.

A superyacht galley is not simply a commercial kitchen installed at an angle. It operates on a moving platform, draws power from generators rather than shore supply, must contain fires without sprinkler deluge flooding the vessel, and has to produce Michelin-level meals for twelve guests in three-metre beam. Every decision compounds.

Workflow Design & Space Planning

We model your galley in CAD before a single piece of equipment is ordered. Prep triangle, cold storage proximity, pass-through aperture dimensions — every workflow decision is mapped against your crew size and menu style. Mise-en-place efficiency on a 60-metre motor yacht requires the same rigour as a Michelin-star service kitchen.

Electrical & Ventilation Engineering

Galley power loads often exceed 80 kW on a 50-metre vessel. We calculate generator demand, coordinate with the vessel's electrical engineers on 50 Hz / 60 Hz compatibility, and specify transformers where needed. Ventilation calculations follow MCA LY3 and SOLAS II-2 — air change rates, make-up air tempering, grease arrestor sizing.

316L Stainless Fabrication

Counter systems, sinks, cold table inserts, and ventilation canopies are fabricated in our Istanbul workshop from AISI 316L sheet — the molybdenum-bearing grade that resists chloride stress corrosion in a saltwater environment. TIG-welded joints are electropolished to eliminate crevices where biofilm can form.

SOLAS Fire Suppression Coordination

Galley fire suppression on commercial-coded superyachts is governed by SOLAS II-2 Regulation 10. We coordinate with your flag-state-approved contractor to ensure the wet chemical or CO₂ system nozzle layout is compatible with your hood geometry and equipment footprint, and that ventilation dampers close on system activation.

A Rational iCombi Pro operating on a yacht programme is not the same as one in a hotel. We deliver onboard training to your chef team, calibrate cooking programmes for provisioning constraints, and maintain a spare-parts inventory for immediate dispatch to marinas in Bodrum, Split, Palma, and Monaco.

Rational — iCombi Pro & SCC WE

The iCombi Pro is the most specified combi-oven on superyachts above 50 metres: its iCookingSuite adapts cooking parameters in real time, reducing over-production waste that matters when provisioning mid-ocean. The SCC WE tolerates marine humidity. We specify marine-frame kits and anti-tip brackets for all installations. Available in 6-grid and 10-grid configurations; 400V/3N or 230V single phase.

MKN — FlexiChef & Combi-Steamer Range

MKN's FlexiChef multifunctional pressure-cooking kettle is increasingly specified on 60–80 metre yachts where galley footprint is premium. The ability to tilting-braise, pressure-cook, and blast-cool within one unit reduces equipment count. MKN combi-steamers carry marine-specification frames with isolating feet rated for 30-degree vessel inclination.

Winterhalter — MT & PT-XL Dishwashers

Winterhalter's UC (undercounter) and PT (pass-through) series are the workhorses of superyacht dishwashing. The PT-XL handles full gastronorm racks at up to 100 racks/hour — important when clearing a 14-cover dinner in a 20-minute turnaround. The integral water treatment cartridge prevents scale deposit in variable port-water conditions from the Bosphorus to the Balearics.

Hoshizaki — Ice Makers & Refrigeration

Hoshizaki's crescent-cube icemakers produce a hard, slow-melting cube preferred by bartenders; their AM series modular stacking scales production to vessel requirements. Marine-spec refrigerated drawers under counters eliminate the need to open large doors in a seaway. Hoshizaki refrigeration operates at ambient temperatures up to 43°C — critical for engine-room-adjacent galleys.

Kenyon Atlantic — Marine Induction

Kenyon Atlantic manufactures the only induction hob range designed from the ground up for marine use, with safety rails, sealed surfaces, and surge-tolerance. Induction eliminates open flame — relevant to SOLAS compliance — and reduces heat load on the ventilation system. The B41690 series flush-mounts into our custom 316L counters.

Liebherr & Vitrifrigo — Cold Storage

Liebherr's marine series walk-in cold rooms and modular refrigerated sections adapt to non-rectangular hull spaces. For wine storage, Vitrifrigo's DW360 and C series drawer refrigerators with vibration-damped compressors maintain the bottle undisturbed at sea. We co-design cold-storage layouts with your chef to minimise provisioning turnaround time in port.

How We Work

The Galley Project Process

A typical galley refit from survey to commissioning runs 12–20 weeks depending on vessel availability and equipment lead times. We manage every stage in sequence to avoid the single-point delays that inflate yardage costs.

Survey & Brief

We board the vessel — in Istanbul, Bodrum, Palma, or wherever she lies — take physical measurements, photograph existing services, review electrical diagrams, and interview the chef. The output is a brief document agreed with the owner's representative before any design work begins.

Design & Specification

CAD layouts with equipment footprints, ventilation schematic, power schedule, and 316L fabrication drawings are produced and submitted for owner/captain approval. We include two rounds of revisions as standard. Design packages can be issued to the yard in DWG or PDF format.

Fabrication & Procurement

316L counter systems are fabricated in our 1,200 m² Istanbul workshop. Equipment is ordered against confirmed lead times. We handle Turkish customs export documentation and freight coordination to the refit yard — whether Tuzla, Palermo, La Ciotat, or Palma de Mallorca.

Installation & Commissioning

Our installation team works within the yard's programme. Equipment is commissioned to manufacturer specification, gas or induction systems are tested under load, and ventilation balancing is verified by measurement. Handover includes as-built drawings, warranty registration, and a chef-operations manual.

What makes a marine galley fundamentally different from a shore-based commercial kitchen? +
Several factors diverge completely from shore practice. Structural movement: every piece of equipment must be secured with anti-tip brackets, and gas systems require motion-activated safety valves. Power supply: you work from generator sets, not a stable grid, which means managing galley load as part of overall power management. Ventilation: make-up air must be tempered while wind direction changes constantly relative to the exhaust termination. Fire suppression: SOLAS and MCA codes govern every system choice, and there is no municipal fire brigade. Spare-parts access: if a magnetron fails in Monaco on a Friday before charter embarkation, the solution is a pre-stocked spare or a technician on the next flight from Istanbul.
