Kalamış Marina Restaurant — Stainless Counter & Shelving System
Coastal kitchen: 304 counters, 316L shelving
A restaurant operating inside Kalamış Marina, Istanbul. Marina restaurants are harder on stainless steel than most people expect — the combination of salt air in the ventilation, humidity from the water, and the heat and steam of a working kitchen accelerates corrosion significantly. Standard commercial kitchen equipment that lasts 10 years inland can show rust within 12 months in a coastal environment.
The owner had experienced exactly that with the previous fit-out and came to us specifically because we understand marine-grade specification. The material choice matters: AISI 304 is the standard for food-contact surfaces in a shore kitchen because it's easy to finish, maintain, and repair. But AISI 316L — with its molybdenum content — is better suited for the wall shelving and exposed structural elements that see the salt air continuously.
We measured the kitchen in detail, documented the workflow, and produced a full layout drawing before any fabrication started. The fit-out included custom-sized lower preparation counters, wall-mounted shelving in several configurations, ceiling-integrated stainless racks for pots and utensils, and heavy-duty mounting hardware throughout. All joints TIG welded, all surfaces passivated after fabrication.
Installation was scheduled to avoid service hours and completed in 3 days without the restaurant needing to close. Over two years of operation since, no corrosion has appeared and no structural deformation has been reported — the fit-out is performing exactly as specified.
